Baked Calico Rice

A colorful baked rice dish with vegetables and often beans or meat, making it a festive, well-rounded casserole for potlucks or family meals.

Ingredients

  • 1 (28 ounce) can diced tomatoes, undrained
  • 1 cup chopped onion 1 cup chopped celery
  • 3/4 cup chopped green pepper 2/3 cup uncooked long-grain rice 1/3 cup vegetable oil
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  1. In a 2-qt. baking dish, combine all ingredients; mix well. Cover and bake at 350 degrees F for 1 to 1-1/4 hours or until rice is tender, stirring occasionally. discard bay leaf before serving.
