Cherry Crumble

While butter (or a similar fat) is essential to crumble, more is not always better. If you go overboard on butter here, it will cause the topping to melt and become greasy. So if you feel your crumble recipe needs a touch more moisture, we suggest cutting in a bit of vinegar or water.

Ingredients

  • 4 cups pitted fresh or frozen tart cherries
  • 1/2 cup sugar
  • 1 tablespoon cornstarch
  • 2 teaspoons vanilla extract
  • 3/4 cup all-purpose flour
  • 1/3 cup sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup cold butter, cubed
  • vanilla ice cream, optional

Directions

  1. Preheat oven to 375°. In a large bowl, combine cherries, sugar, cornstarch and vanilla. Transfer to a greased 8-in. square baking dish.
  2. In a small bowl, combine flour, sugar, cinnamon and salt. Cut in butter until mixture resembles coarse crumbs. Sprinkle over cherries.
  3. Bake until filling is bubbly and topping is lightly browned, 40-45 minutes. Serve warm with ice cream if desired.
