Doritos Chicken Casserole
This crowd-pleasing Doritos chicken casserole combines tender chicken, zesty spices and layers of cheesy Doritos for a crave-worthy meal that’s bursting with flavor.
Ingredients
- 3 cups cubed cooked chicken breast
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (10 ounces) diced tomatoes and green chiles, drained
- 1 can (10-1/2 ounces) condensed cream of chicken soup, undiluted
- 1 can (8-3/4 ounces) whole kernel corn, drained
- 1/4 cup reduced-sodium chicken broth
- 1 tablespoon taco seasoning
- 1 package (9-1/4 ounces) doritos nacho chips, crushed, divided
- 3 cups shredded cheddar cheese, divided
- optional: sour cream, chopped avocado, salsa, minced cilantro
Directions
- Preheat oven to 350°. In a large bowl, combine chicken, beans, diced tomatoes, soup, corn, broth and taco seasoning until well combined.
- In a greased 9x9-in. dish, layer half the crushed Doritos, half the chicken mixture and 1-1/2 cups shredded cheese. Repeat layers.
- Cover; bake 20-25 minutes. Uncover, bake until cheese is bubbly and golden brown, another 5-7 minutes. Serve with toppings, as desired.
