Italian Pork and Rice
Tender pork cooked with Italian herbs and tomatoes, served over rice or baked into a casserole. A comforting and flavorful dish with Mediterranean notes.
Ingredients
- 1 cup sliced fresh mushrooms 1/3 cup chopped onion
- 1 garlic clove, minced
- 1 tablespoon butter or margarine 1 (14.5 ounce) can italian diced tomatoes, undrained
- 1 cup cubed cooked pork
- 1/2 cup chopped green pepper 1/2 cup chopped sweet red pepper
- 1 teaspoon italian seasoning 1/2 teaspoon salt
- 1 pinch sugar
- 1/2 cup uncooked instant rice
Directions
- In a saucepan, saute the mushrooms, onion and garlic in butter until tender. Stir in tomatoes, pork, peppers, Italian seasoning, salt if desired and sugar; bring to a boil. Stir in rice. Cover and remove from the heat; let stand for 5 minutes. Stir before serving.
