Mediterranean Tuna Salad Sandwich

Tuna salad mixed with olives, capers, red onion, and olive oil for a Mediterranean twist. Served in pita or crusty bread with greens—fresh, briny, and deliciously different.

Ingredients

  • 1 (12 ounce) can water packed tuna, drained
  • 1 (15.5 ounce) can white beans, rinsed and drained
  • 1 (14 ounce) can artichoke hearts, drained and chopped
  • 1/4 cup pesto
  • 1/4 cup low-fat mayonnaise
  • 2 tablespoons fresh lemon juice 1/4 teaspoon ground black pepper
  • 6 lettuce leaves
  • 6 slices roman meal original bread

Directions

  1. Combine tuna, beans, artichokes, pesto, mayonnaise, lemon juice and black pepper in medium bowl.
  2. Place one lettuce leaf on each slice of toast; top with about 3/4 cup tuna salad each.
