Peanut Rice

A savory South Indian-style rice dish flavored with roasted peanuts, spices, and curry leaves. Nutty, aromatic, and perfect as a light lunch or lunchbox filler.

Ingredients

  • 1 cup uncooked basmati rice
  • 2 1/4 cups water 1/2 teaspoon salt
  • 1/4 teaspoon ground turmeric 1/2 cup frozen petite peas, thawed
  • 1/2 cup dry roasted peanuts

Directions

  1. Mix the rice, water, salt, and turmeric in a pot, and bring to a boil. Cover, reduce heat to low, and simmer 20 minutes.
  2. Stir the peas and peanuts into the cooked rice to serve.
