Ingredients

  • 2 1/2 cups unsweetened plain almond milk
  • 2 cups old-fashioned rolled oats
  • 1 cup pumpkin puree
  • 2 tablespoons pure maple syrup
  • 2 tablespoons flaxmeal or chia seeds
  • 4 pitted dates, chopped
  • 1 tablespoon espresso powder
  • 1 teaspoon pumpkin pie spice, plus more for sprinkling
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup whole-milk plain strained (greek-style) yogurt

Directions

  1. Combine almond milk, oats, pumpkin, maple syrup, flaxmeal (or chia seeds), dates, espresso powder, pumpkin pie spice, vanilla and salt in a blender; process until smooth, about 30 seconds.
  2. Divide the mixture evenly among 4 (8-oz.) jars. Cover and refrigerate until thickened, about 8 hours. Just before serving, top with yogurt and sprinkle with pumpkin pie spice.
