Ranch Roasted Cauliflower
Ranch-roasted cauliflower is a bold, flavorful side dish that brings out the natural sweetness of cauliflower combined with an herb-packed coating. Garlic, onion and dill add a savory punch, while an optional squeeze of lemon offers a brighter flavor. Ranch-roasted cauliflower pairs with just about anything, and the versatile coating can work with other veggies like carrots, broccoli or Brussels sprouts.
Ingredients
- 6 cups cauliflower florets
- ¼ cup ranch dressing
- 1 teaspoon dried dill
- 1 teaspoon onion powder
- ½ teaspoon garlic powder
- ¼ teaspoon ground pepper
- ¼ teaspoon salt
- 1 tablespoon chopped fresh herbs (such as chives, dill and flat-leaf parsley)
- lemon wedges for serving (optional)
Directions
- Preheat oven to 450°F with rack in center position. Toss 6 cups cauliflower with ¼ cup ranch dressing, 1 teaspoon dill, 1 teaspoon onion powder, ½ teaspoon garlic powder, ¼ teaspoon pepper and ¼ teaspoon salt in a large bowl. Transfer to a large rimmed baking sheet; spread into a single layer.
- Roast, stirring once halfway through, until tender and golden brown, about 16 minutes. If desired for more browning, increase oven temperature to broil and broil until browned, about 2 more minutes. Transfer to a serving bowl; sprinkle with 1 tablespoon herbs. Serve with lemon wedges, if desired.
