Southwestern Whole Grain Egg Sandwich

Whole grain bread holds eggs, salsa, avocado, and cheese for a healthy, protein-packed breakfast or lunch with Southwest flair.

Ingredients

  • 2 large eggs
  • 2 tablespoons shredded cheddar or jack cheese
  • 2 tablespoons fresh salsa
  • 2 tablespoons sliced green onions 2 slices toasted roman meal bread
  • sliced avocado (optional)

Directions

  1. Spray medium skillet with nonstick cooking spray; heat over medium heat. Add eggs to pan; cook 2 minutes on each side or until desired degree of doneness. Sprinkle with cheese; cover and cook for 30 seconds until cheese melts. Remove from pan. Top with egg, salsa, green onions and avocado slices
