A Mediterranean-inspired beef stew made with tomatoes, olives, herbs, and tender chunks of beef. This slow-cooked dish delivers bold flavors and a rich, tangy broth perfect for soaking up with crusty bread.

Ingredients

  • 2 pounds boneless beef bottom round roast or chuck pot roast, cut into 1-inch pieces
  • 1 (16 ounce) bag frozen whole small white onions
  • 1 (16 ounce) package fresh or frozen whole baby carrots
  • 2 tablespoons all-purpose flour 1 3/4 cups swansonВ® beef
  • broth (regular, 50% less sodium or certified organic)
  • 1 (5.5 ounce) can campbell'sВ® v8В® 100% vegetable juice
  • 1 tablespoon packed brown sugar bouquet garni
  • hot cooked egg noodles

Directions

  1. Place the beef, onions and carrots into a 3 1/2- to 6-quart slow cooker. Sprinkle with the flour and toss to coat.
  2. Stir the broth, vegetable juice and brown sugar in a medium bowl. Pour the broth mixture over the beef and vegetables. Submerge the Bouquet Garni into the broth mixture.
  3. Cover and cook on LOW for 8 to 9 hours* or until the beef is fork- tender. Remove the Bouquet Garni. Serve the beef mixture over the noodles.
